Producer's Notes

At Holyrood, we push the boundaries of traditional whisky making. While others tend to use more traditional yeasts and malts, we like to do something a little bit different. For Pitch, we have paired Scotch Pot Malt and Brown Malt – most commonly used in dark porter beers – and ‘pitched’ two yeasts that are typically used when making red wine, Pepe Nero and Toro Nero. Pitch is the final release in our flagship collection that aims to debunk the age-old notion that 80% of the flavour comes from the cask. At Holyrood we want to highlight what and how much malt and yeast can bring to the party.

NOSE:

Cacao, blackcurrant, honey

PALATE:

Sweet and rich with stewed red fruit and spicy green peppers

FINISH:

Hints of coffee, raisins and oak spice
